But after spending time inside before opening day with franchise owner Tony Caballero, DJ Digital and RV quickly realized this isn't just another restaurant opening.
It's the culmination of a journey that started nearly two decades ago and one that has finally come full circle.

We were given an exclusive first look inside the new Walk-On's Sports Bistreaux at 3520 NE Evangeline Thruway in Carencro, just off I-49 near Gloria Switch and in front of Center Square Shopping Center.

A Story More Than A Decade In The Making
For Tony Caballero, this location means far more than opening another restaurant.
Caballero joined the Walk-On's brand in 2008 and served as general manager of the Lafayette location when founders Brandon Landry and Jack Warner made the bold decision to expand beyond Baton Rouge for the very first time.
That Lafayette restaurant became the proving ground that helped shape Walk-On's national expansion. After Drew Brees joined the company as co-owner in 2015, the brand exploded across the country.

Caballero eventually worked his way through the company's corporate ranks before becoming a franchise owner himself in 2023.
One condition was non-negotiable.
He had to own the original Lafayette location that helped launch his career.
Now, years later, opening Store No. 100 in Carencro represents what he describes as a true full-circle moment.
Carencro itself has been on the company's radar since as early as 2012. With the city's rapid growth over the last several years, the timing finally felt right.
Unlike Any Walk-On's You've Ever Seen
Forget everything you think you know about a traditional Walk-On's.
This Carencro restaurant introduces an entirely new prototype for the company.
At roughly 5,300 square feet, it's smaller than many existing locations, but it's been designed to be dramatically more efficient.
The open floor plan creates an intimate atmosphere while allowing guests to see virtually every part of the restaurant.
The centerpiece may be the futuristic-looking bar, but the real innovation is happening behind the scenes.
The Kitchen Might Be The Biggest Upgrade
While guests will appreciate the atmosphere, the kitchen may end up being the restaurant's biggest game changer.
New cooking equipment and advanced technology are designed to improve consistency, reduce mistakes, speed up service, and deliver fresher food to every table.
From upgraded fryers and grills to new systems that streamline production, nearly every part of the kitchen has been reimagined with one goal in mind: getting quality food to guests faster without sacrificing freshness.
The improvements are expected to significantly reduce ticket times while helping ensure everyone at the table receives their meals together.
Built For The Carencro Community
General Manager Evan and his team are already training ahead of the restaurant's scheduled July 20 opening.
As we toured the restaurant, Evan was hanging jerseys honoring one of Carencro's greatest athletes, Kevin Faulk.
The display includes jerseys from Faulk's days at Carencro High School, LSU, and the New England Patriots, adding a hometown touch that immediately connects the restaurant to the community it will soon serve.
The restaurant is expected to employ around 100 people while serving Carencro, North Lafayette, and travelers along Interstate 49.
